Roasted Sweet Potato Salad


  • 3 cups sweet potatoes peeled diced
  • 0.75 cup Ken’s Honey Mustard Dressing
  • 0.75 cup red bell pepper chopped
  • 0.25 cup green onions chopped
  • 1 tsp garlic minced
  • 0.25 cup hazelnuts chopped and toasted
  • Salt and ground black pepper to taste


  1. Preheat oven to 350° F. Place potatoes in a roasting pan and roast for 15 minutes until tender; cool.
  2. In a large bowl, mix Ken’s Honey Mustard Dressing, red bell pepper, green onions, garlic and hazelnuts.
  3. Add the potatoes and season with salt and pepper. Refrigerate until ready to serve.
